I was a bit tired this year and couldn't fathom making the usual meat pies for ANZAC Day. My next thought was sausage rolls, but I quickly remembered that making those was somewhat labor intensive as well. Then I decided on the perfect compromise. The American version of sausage rolls: pigs in a blanket. They are way easier to make and one of Nic's favorites. In addition to those, I used the spaghetti squash from our 22 week photo to make Pesto Parmesan Spaghetti Squash. It was delicious. Of course, ANZAC Day wouldn't be complete without ANZAC biscuits, so I whipped some of those up. They were delicious. We ended the night by watching the Essendon vs. Collingwood AFL game.
They shall grow not old, as we that are left grow old;
Age shall not weary them, nor the years condemn.
At the going down of the sun and in the morning
We will remember them.
